We are excited about this coach.  We are wondering about recommendations regarding refinishing the kitchen floor.  Also, the wood around the driver and passenger windows are faded/water stained, etc.  What kind of recommendation do you have?

It would all depend on how bad the current finish is. I had an 89 Contessa and just scuffed the floor with a palm sander and I think 220 grit. I then used several coats of a matte finish Urethane varnish on it and it looked like new when done. I liked a product called Zip Guard but I have not seen it lately. Most any urethane varnish will work in the gloss or matte finish you desire to get a close match.

You can pull the wood around the windows and if they are bad enough sand them until all the old finish is removed and then varnish those also. Try a test piece of wood and the finish you have selected to see if the gloss level and color will work well enough. I have also used stain to get a closer color match before I varnish especially on cherry.
