What's the quanitY of coolant for 06 Monterey w/C9?

It really depends on your radiator size but roughly eight gallons 50/50 mix.  Don't be a ding-dong like me and buy eight gallons of full strength thinking its already mixed.  There are several out there that are for Diesel engines (Cat/Cummins approved) I used a Valvoline product.

Initial fill coolant capacity for a C9 is 50-55 qts.

Even though your coach had an initial fill of 10.5 to 11.5 gallons like Steve posted, a drain and refill will still leave 2 to 3 gallons in the system that will not drain out. Therefore, a drain and refill will take from 8 to 9 gallons.

See image below from my '06 Monterey (C9) manual:

The coach manufacturer determines radiator size and hose length, etc., so the capacity varies for any engine from mfr. to mfr., and CAT won't list a flat capacity for an engine.  That has to come from Beaver/Monaco.

Going by Gerald's several gallons retained numbers, it looks like you'd need roughly 13 gals to top up, so presuming 50/50 mix maybe get 7 g. of antifreeze;  you can always take back what's not opened.

All that said, when I had ELC put in back in 2012, according to my receipt they used 5g of ELC and 5g of water, ran to operating temp and leak checked, and "topped off", so they needed 6g to do the job.
