I have a 2006 Monterey. The Aladdin monitor has become very dim. How can I restore its original brightness?

The monitor is a separate component from the Aladdin (it is not made/provided by Aladdin). I assume you have already gone through the screen adjustment settings for the monitor.
The Aladdin just feeds a video signal to the monitor (which can be a Sony or Kenwood or anything else).
It is possible that something is wrong with the "video out" signal from the Aladdin, but more likely the monitor is just going. Many have replaced their in-dash monitors with new monitors (you just need a monitor with RCA input jack that accepts NTSC/PAL input).

but there are much less expensive options if you just wanted a video monitor and don't care about all the other stuff (radio, CD control, GPS, etc.)

There is a thread on the IRV2 forum  with all the info.
I can't post a link here but you can go to that forum, search in the Monaco section, for "Aladdin" and should not be too hard to find. There are probably a few here that have done the same - so maybe they will come along shortly and be able to provide some additional info too.

I know some have added a second monitor (just a video only monitor) for the Aladdin so they can see their backup camera full time and only use the in-dash receiver for entertainment.

I have the same kenwood and split the camera feed at the Aladdin input to a cheap monitor from amazon. You can run the new fed to the monitor down the drivers door post with a fish tape. Now I can watch the backup camera full time and keep the system monitoring on the kenwood. This only works if you have the 1 camera system.

If you replaced sensors with the Catcon sensors did you have to relearn the Aladdin after or did the new sensor just work?

No adjustment or calibration needed. The sensor is a direct replacement for the original. All the calibrations are in the Aladdin, and do not need to be touched.
Getting to the sensors to replace them is the hard part.

When replacing the sensors the tank must be empty. To be safe I raise the left side of the coach after draining the tank. With the new sensor installed the tank should read zero. At this point I fill the tank with fresh water and calibrate if it isn’t showing 100%. Drain the tank and verify it reads empty. Be sure you level the coach before calibrating. As mentioned earlier the sensors may not have to be calibrated but the pilot side of me says to err on the side of caution. Just getting to them is a pain.

For future reference, I ordered sensors from Catcon. 
3 new sensors installed today and the Aladdin is reading close to right again.
